Bear in mind that you will only be able to boil the dal in the microwave - for the tadka and other steps you will have to use gas stove. I haven’t ever tried making the tadka in a microwave and doubt if anyone else has ever been able to.

Here are the steps:

1. Soak the dal in water for a few hours as you would normally do before cooking it over the stove.
2. Once the dal has been soaked, take a utensil that you can use in a microwave. Ensure that you use the ones that are safe to use in a microwave.
3. Pour the dal into the vessel and add about 3-4 times the water.
4. Let it cook in the microwave for 25-30 minutes.
5. Prepare the tadka as you normally would and add it to the boiled dal when you take it out of the microwave.

Serve hot !

Here are a few quick steps on how to make chocolate cake roll and the ingredients for the recipe.

Recipe for a Chocolate Cake Roll

Cake flour - 1/2 cup
Unsweetened cocoa powder - 1/2 cup
Cornstarch - 3 tbsp
Baking soda - 1/2 tsp
Baking powder - 1/2 tsp
Salt - 1/2 tsp
Eggs - 5 pieces
Finely ground sugar - 1 cup
Whipped topping - (At room temperature) - 250 gms
Chocolate chips

Steps to Make Chocolate Cake Roll

1. Heat the oven to a temperature of 350 degrees for about 10 minutes before you place the pan in it.

2. Take a flat bottom baking pan, cover it with some parchment paper and apply some butter over it to prevent the cake from sticking to it.

3. Combine the flour, cocoa powder, corn, baking soda, baking powder and salt in a vessel. Mix the ingredients together till not lumps remain.

4. In a separate vessel, break the eggs and pour the egg yolks into the sugar. Mix the egg yolks and the sugar till the time they form a soft fluffy mix.

5. Form alternate layers of the egg yolk, egg white and the flour mix in the baking pan. Ensure that the cake it evenly spread and does not form too thick a layer since it will have to be rolled after it has been baked.

6. Bake for about 20 minutes till chocolate roll cake has been fully baked. You can insert a toothpick to check if the cake has been fully done or not - if the toothpick comes out clean, consider it done.

How to Fill The Chocolate Roll Cake

When the cake has cooled a little but not too much, place it on a clean piece of cloth. Mix the chocolate chips into the thawed whipped topping (there are a number of other toppings that you can try). Gently apply the topping mixture to the cake. Using the cloth, gently roll the cake into the shape of a cylinder. Remember that the innermost portion is the slightly tricky one to roll but as you go along, it becomes easier. Dust the surface with powdered sugar. Once the cake has been rolled into position, apply some chocolate cream and chips to the surface just to add the additional touch. Freeze it till its time to ear. Gently slice the chocolate cake roll into neat little slices.

Recipe for Cheese Cake

1. Crackers or biscuits - 10 - 15 depending upon the size. (If you are using biscuits, they should preferably without too much salt or sugar.
2. Butter - 2 Table Spoon
3. Eggs - 3-4 pieces
4. Vanilla Extract - 1 Table Spoon
5. Milk - 1 cup
6. Cream Cheese - 250 grams
7. Fresh Cream - 1 cup
8. Sugar - 2 Cups
9. Flour (Sifted) - 1/4 Cup

Steps to Make Cheese Cake

1. Melt the butter in a small bowl over slow heat.

2. In a separate pan, break the crackers (or biscuits) and grind into a fine powder. Mix the melted butter with the ground cracker. Press the resulting thick mixture onto the bottom of the pan.

3. Take another vessel and mix the finely ground sugar with cream cheese till the sugar completely dissolves. Once the sugar have been added, put the sour cream and the vanilla extract into the mixture and mix the ingredients.

4. We now take the eggs and one by one, add the them to the mix. Ensure that you mix the first egg completely before pouring in the next one. Stir it properly so that all the ingredients blend completely with each other.

5. At this point, add the sifted flour to the mix. Ensure that you mix as much flour to the mix as it can accommodate at this point. Then gently add the milk or cream to the cake mixture. Ensure that you add only as much milk as will dissolve any remaining sugar and other ingredients and provides a smooth think consistency to the entire mix.

6. Preheat the oven to 175 deg centigrade (350 deg Fahrenheit) for about 10 minutes.

7. Pour the mix in the baking pan and place it the oven. Take the cake out of the oven just before it is fully baked as we would need to apply the topping.

Making the topping for the Cheese Cake

One of the good things about the cheese cake is that you have a great variety of toppings to choose from. Here are a few toppings that you can apply to your cheese cake.

Peanut Butter Topping

Peanut butter - 3-4 Table spoon
Light brown sugar - 1/2 Cup
Vanilla extract - 1 Table spoon
Sour Cream - 1 Cup

Mix all the ingredients in a bowl till all of them have blended well. Using a spoon, apply the mix to the top of the cheese cake. Once finished, bake the cake for a few minutes till it is completely done. Refrigerate once done.

Strawberry Topping

Fresh strawberries - 10-15 pieces
Finely ground sugar - 2 Table spoon
Strawberry extract - 1 Table spoon
Sour Cream - 1 Cup

This topping does not require the cheese cake to be baked again so you can ensure the cake is taken out of the oven once it is fully baked. Mix the cream, strawberry extract and sugar in a bowl. Aplly gently over the top of the cheese cake. Place strawberries on each slice. Place it in the refrigerator till the cheese cake is ready to be served.

How to make Fondant Cake

Here are a few quick steps on how to make fondant cake and the ingredients for the recipe.

Recipe for a Fondant Cake

1. Unflavored gelatin - 1 Table Spoon
2. Flavoring - Strawberry, Chocolate and Vanila are some of the most popular flavors
3. Corn Syrup - 1/2 cup
4. Cold Water - 1/3 to 1/4 cup
5. Glycerin - 1 Table Spoon
6. Sugar - Finely grounded (Preferably confectioner’s sugar) - 6 to 8 cups

Steps to Make Fondant Cake

1. Take a flat bottom pan and fill it with the required quantity of water. Now sprinkle the gelatin over the cold water so that it gets properly distributed.

2. Once the gelatin has been added to the water, heat the mixture. The idea here is to mix the gelatin properly and evenly as gelatin tends to form lumps which are not good when bake the cake later.

3. Once the gelatin has dissolved fully, add the glycerin and the corn syrup to the mix. Stir well so that all the ingredients mix properly.

4. Pour the finely ground sugar in a separate flat bottom vessel. Once all the ingredients have mixed well (the gelatin, glycerin and corn syrup), pour the mixture over it. Stir to mix the ingredients properly.

5. Add this point, add the flavoring of your choice. The best way is to divide the fondant into 2 or three parts and add different flavors to it. A fondant cake with many bright colors tends to go much better with kids and adults alike

Baking the Cake to be used with the Fondant

Now that we have our fondant ready, let’s move onto making the cake, shall we. You can use any cake as a foundation but be sure that the cake goes well with the fondant. In our case, let’s being by baking ourselves a nice butter cake.

1. Butter - Freshly prepared - 1/4 to 1/2 cup
2. Eggs - 2 or 3
3. Sugar - 1 cup
4. Flour - 2 to 3 cups
5. Baking powder - 1 Table spoon
6. Salt - 1/4 Table spoon
7. Milk - 1/2 Cup (you can also use fresh cream)

Steps to Make Butter Cake

1. Pour the butter, sugar, salt and baking powder in a big bowl. Using a manual egg stirrer, mix the ingredients together. The idea here is to not only mix them well but also to allow as much air to get in as possible so that the trapped air bubbles are able to provide volume to the cake at the time of baking.

2. Once the mixture has become very soft and fluffy, add eggs one at a time. Before you add the next egg, ensure that the previous egg has been properly assimilated in the mix and that it has acquired proper consistency.

3. At this point, sift the flour and add it to the mix. Ensure that you mix as much flour to the mix as it can accommodate at this point. Then gently add the milk or cream to the cake mixture. Ensure that you add only as much milk as will dissolve any remaining sugar and other ingredients and provides a smooth think consistency to the entire mix.

4. Now comes the baking part. Ensure that the oven used for baking has been pre-heated. Ideally you should switch on the oven a few minutes before you place the dough in it. The oven temperature at the time of our placing the dough in it should be around 175 deg Centigrade (or 350 deg Fahrenheit).

5. Take a baking pan and pour the butter cake mix into it. Since the cake will expand, you would need to have the pan with walls a little higher than the height of the cake mixture. Bake till done.

How to Apply the Fondant to the Cake

Once we have the fondant and the cake ready, its time for us to marry them both. Place the cake over a smooth surface. Now measure the cake. The idea here is to first spread the fondant on the smooth surface in such a manner that it completely covers the surface of the cake. So if your cake it 6 inches in diameter and has wall 4 inches high, you would need a fondant that is 6 inches + 3 + 3 inches (12 inches) in diameter so as to cover both the surface and the cake walls. To be on the safer side, let us leave a margin of another 4 inches and make spread the fondant to make a circle 16 inches in diameter. Now comes the tough part so brace yourself.

On the smooth surface, place a plastic sheet. Take some finely grounded sugar and sprinkle it over the sheet. Now after the fondant has cooled to the room temperature, roll it into a round ball. Using your palms, press the ball so that it now beings to look like a flattened disc. With the help of a rolling pin, roll the fondant into a circle. After every few rounds of rolling, you will need to flip the fondant and roll the other side. To prevent the fondant from sticking to the sheet, sprinkle some more sugar onto the surface. Err on the side of excess because if the fondant begins to stick, things can get a little messy.

Once the fondant has been rolled in to a large circle, its time to address the cake. Cut off the top surface of the cake so that all the bumps and cracks are chopped off. Now smoothen the corners a bit so that the fondant can roll over smoothly. Now gently pick up the entire sheet on which the fondant was rolled and gently invert over the top of the cake. Put some sugar on your palms and use them to press the various loose portions into place. Use a knife to cut off the extra portions.

You can now dress up the fondant cake with fresh icing, additional layers of colored fondant or fruits. One quick tip would be to use a knife to carve out images from flattened fondant and pasting them on the fondant cake to give it the look you want.

Recipe for a Chocolate Cake

1. Flour - 150 grams
2. Cocoa powder - 30 to 40 grams
3. Dark chocolate - 50 - 75 grams
4. Sugar - 150 grams
5. Fresh butter - 150 grams
6. Eggs - 3 to 4 pieces
7. Vanilla extract - 1 table spoon
8. Baking powder - 1 Table spoon
9. Sour Cream - 1/2 Cup

Steps to Make Chocolate Cake

1. The first in making a chocolate cake it to get some melted chocolate. The best way to do it to purchase some good quality low-sugar chocolate from the market and put into a vessel with boiling water.

2. Pour the butter, sugar and baking powder into the melted chocolate. Using a manual stirrer, mix the ingredients together. Try to get as much air into the mix as possible. The trapped air bubbles will provide much needed volume to the mix when we bake it a little later.

3. Once the mixture has become very soft and fluffy, add eggs whites, one at a time Gently break the eggs and pour them into a small vessel. Now pour the egg white in to the cake mix by holding a spoon against the egg yolk which prevents it from slipping out. Before you add the next egg white, ensure that the previous egg has been properly assimilated in the mix and that it has acquired proper consistency.

4. At this point, sift the flour and add it to the mix. Ensure that you mix as much flour to the mix as it can accommodate at this point. Then gently add the cream to the cake mixture. Ensure that you add only as much cream as will fully dissolve any remaining sugar and other ingredients and provide a smooth think consistency to the entire mix.

5. Pour the mix into the baking pan. Ensure that the oven used for baking has been pre-heated. Ideally you should switch on the oven a few minutes before you place the dough in it. The oven temperature at the time of our placing the dough in it should be around 175 deg Centigrade (or 350 deg Fahrenheit). Since the cake will expand, you would need to have the pan with walls a little higher than the height of the cake mixture.

6. It should take another 30 minutes for the cake to be fully baked. In that time, let’s move on to preparing the icing for the chocolate cake.

Ingredients for the Icing for making the Chocolate Cake

1. Butter - 100 grams
2. Dark chocolate - 200 grams
3. Icing Sugar - 250 grams
4. Sour Cream - 100 grams

Steps to Make chocolate Cake Icing

1. Melt the chocolate in the same way as we did for the chocolate cake. While the chocolate melts, mix the butter and the icing sugar together in a vessel. Once the chocolate has melted fully, add that and the sour cream to the mix. You can also use maple syrup or boiling water to losen up the icing mix, if required.

2. You have a number of options on how you would like to apply the icing to the cake. The first option is the apply it only on the top. The other is to gently cut the cake into two halves (along the surface of the able) and apply the icing in between the halves as well as the top. Take you pick !!!

3. Before you being the icing, ensure that the mix is soft enough to spread well but not too soft (otherwise you’ll end up with most of it dripping off onto the platter rather than on the cake).

4. You can now add chocolate chip cookies or simply garnish a chocolate bar onto the surface to decorate it. If you are not able to lay our hands on good quality chocolate chip cookies, you can simply peel off a few layers from a (cold) chocolate bar using a potato peeler. Add dry fruits if you love them - walnuts go extremely well with chocolate Refrigerate it and serve cold.

And there we are with our nice looking chocolate cake !

6. The butter cake mix will expand as time progresses and as more and more air bubbles are produced. Once the outer layer has acquired a slightly (darkish) golden hue, you can put a toothpick in and check out it the inside has been properly baked.

1. Black (Urad) Dal - 2- 4 cups
2. Rajma - 2 Cups
3. Onions - 3- 4 pieces
4. Tomatoes - 2 -3 pieces
5. Garam Masala - 2 Table spoon
6. Chili Powder
7. Turmeric Powder
8. Ginger
9. Fresh Cream
10. Ghee/Oil
11. Coriander Leaves (Dhaniya)
12. Salt

Steps to make Dal for Dal Baati

1. Soak the Dal and Rajma overnight. Soaking them for a longer duration ensures that the lentils will cook properly and evenly.

2. Once the lentils (dal and rajma) have been soaked, drain the excess water. Now add some fresh water to a pressure cooker and after putting the dal rajma mix into it, cook for a few minutes. Once the mixture has become soft and you can feel the aroma being just right, turn off the gas.

3. In a separate vessel, add 2-3 table spoon of ghee or oil. Let it heat up for a few minutes. Add finely cut onions to the mix. Once the onions have become golden brown, add finely cut ginger (or ginger powder if you have that available) and the finely cut tomatoes to the mix. After a few minutes add the dal-rajma mix, salt and the masala. Let the mixture boil for a few minutes. Once the mixture has acquired a thick consistency add lots of freshly prepared cream (or ghee). Garnish with coriander (dhaiya) leaves.

Ingredients to make the Baati for Dal Baati

1. Whole wheat flour (Atta) - 5-6 cups
2. Ghee
3. Curd - 2-3 Table spoon
4. Salt
5. Suji - 1 cup
6. Jeera
7. Ajwian
8. Baking powder - 1/4 to 1/2 Table spoon

Steps to make the Baati for Dal Baati

1. In a large vessel, mix the flour (atta), ghee, salt, curd, ajwain, jeera, baking powder and water. Knead the mix till all the items have been completely mixed.

2. Make small (golf ball size) rolls from the mix. Keep them in a separate plate for 2 hours under a wet cloth

3. Now there are two way in which these baati can be cooked. You can either cook them in a tandoor or you can first boil them in water and then cook them using a tandoor or a microwave. If you prefer boiling them first, you can put all the baatis in boiling water for about 10-15 minutes and them put them into the tandoor or microwave. If you put them directly in to the tandoor, the baati’s will crack a bit (which is how they were cooked before microwaves came in to the picture)

4. Once the baati has been prepared, take a large vessel and fill it with melted ghee. One by one, put the baatis into the ghee and let them soak it for a few minutes.

5. Serve hot with dal.

Let us know how did you find this recipe for dal baati.

Here are a few quick steps on how to make Dal Khichdi and the ingredients for the recipe. Dal khichdi can be prepared using toor dal, masoor dal or moong dal. In this recipe, we discuss the preparing dal khichdi with moong dal but feel free to use other lentil (dal) varieties as well.

Recipe for Dal Khichdi

2. Yellow moong dal - 1/2 to 1 cup
3. Ghee
4. Curry leaves
5. Turmeric powder - 1/2 Table spoon
6. Red chillies - 2-3 pieces
7. Garam masala - 1/2 Table spoon
8. Cumin (jeera) seeds
9. Salt to taste
10. Tomato - 2 pieces finely cut

Steps to make Dal Khichdi

1. Soak the dal and rice in a vessel for about 10 minutes and the rinse properly with water.

2. Put the dal and rice mixture in a pressure cooker rice with about 250-400 ml of water. Turn the gas to medium and add turmeric powder, curry leaves and salt. Cook for about 10 minutes.

3. Open the pressure cooker when the aroma indicates that the mixture has been properly cooked. If excess water remains in the cooker, boil the mix at medium heat for a few more minutes. By this time the dal khichdi mix should be soft and squish easily with a spoon. Turn off the gas.

4. In a separate flat bottom vessel, pour some ghee and let it melt.

5. Add a few cumin seeds, red chillies and finely cut onion to the mix and let them fry for a few minutes. Add the tomatoes after a little later.

6. Let the onion turn golden brown. At this point, the tadka is ready. Add the dal khichdi to the tadka and mix well.

7. Garnish with coriander and garam masala.

8. Serve dal khichdi hot and make your friends and family happy

Steps to make Dal Makhani

1. Let the Urad, Rajam and Chana dal soak in water for about 8-10 hours. This is the first and the most crucial step in the preparation of the Dal Makhani. Soaking it for longer hours makes the lentils cook properly and makes them loose so that they provide a think consistency to the dal.

2. Once the dal mixture has been left to soak overnight, wash it properly in running water.

3. Take a vessel and let the dal mixture boil for 30 minutes at slow heat.

4. Once the dal mixture has has been properly boiled, drain excess water and turn off the gas.

5. In a separate vessel, heat 2-3 tablespoons of ghee (or oil). Once the oil has been heated properly, add 1/2 tablespoon of Jeera (Cumin) seeds and finely cut onion to it.

6. After a few minutes, once the onion has started to turn golden yellow, add the tomato and garlic & garlic paste to it the mix.

7. Once the the tadka has been prepared, add the boiled dal mixture to the it. On slow heat, let the mixture simmer for about half an hour.

8. Once the dal has achieved a strong consistency (the lentil pieces should not be easily separated from the stew), add the freshly prepared cream to it and mix well. Garnish with coriander leaves and serve dal makhani hot.
